Cinnamon Roll Blondies

Soft, gooey, and full of cinnamon flavor, these Cinnamon Roll Blondies are the ultimate treat for any time of year. With layers of cinnamon and a topping of melted white chocolate, these blondies strike the perfect balance of indulgence and better-for-you baking. Simple to make and impossible to resist! 

Ingredients

  • 3 cups almond flour
  • 3 tablespoons coconut flour
  • ¼ teaspoon salt
  • ⅓ cup coconut sugar
  • ⅓ cup maple syrup
  • ⅓ cup melted ghee or coconut oil
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1 scoop Vanilla Anea Protein Powder
  • ½ cup white chocolate

Directions

  1. Preheat the oven to 325° and line an 8x8 pan with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, salt, and coconut sugar. Mix well.
  3. Add in the maple syrup, ghee, egg, Anea Protein Powder, and vanilla and mix until dough is formed.
  4. Pour half of the dough into the pan and then add a layer of cinnamon.
  5. Pour the remaining dough on top. Bake for 23 minutes and then let cool before glazing.
  6. Top with melted white chocolate and enjoy!
