Protein Lemon Bars

Ingredients
Oat Shortbread
- 1 cup old-fashioned oats
- 1 scoop of Anea Vanilla Protein Powder
- ¼ teaspoon sea salt
- ½ teaspoon baking powder
- ¼ teaspoon almond extract (optional)
- 2 tablespoons avocado oil
- 2 tablespoons honey
Lemon Filling
- ½ cup cane sugar or honey
- 1 tablespoon lemon zest
- 1 scoop of Anea Vanilla Protein Powder
- 4 eggs, room temperature
- ½ cup lemon juice
- Coconut whipped cream, for serving
Directions
- Preheat oven to 325°F and line an 8x8 baking dish with parchment.
- Add oats to a food processor and process until they become a fine flour. Add Anea Vanilla Protein Powder, salt, and baking powder. Pulse a few times to incorporate, then add almond extract, avocado oil, and honey. Pulse until the mixture forms a crumbly dough.
- Press the dough into the baking dish using a measuring cup to help form it into an even layer. Bake for 10 minutes.
- Meanwhile, add sugar or honey, lemon zest, Anea Vanilla Protein Powder, and eggs to a mixing bowl. Whisk until the protein powder is fully incorporated, then whisk in the lemon juice.
- Pour the lemon mixture on top of the oat shortbread.
- Bake for 15 minutes. It will be set with a slight jiggle when done.
- Allow the lemon bars to cool completely, then cover and place in the fridge for a few hours before cutting into squares. Garnish with a dollop of coconut whipped cream when ready to serve!
