Protein Lemon Bars

Ingredients

Oat Shortbread

  • 1 cup old-fashioned oats
  • 1 scoop of Anea Vanilla Protein Powder
  • ¼ teaspoon sea salt
  • ½ teaspoon baking powder
  • ¼ teaspoon almond extract (optional)
  • 2 tablespoons avocado oil
  • 2 tablespoons honey 

Lemon Filling

  • ½ cup cane sugar or honey
  • 1 tablespoon lemon zest
  • 1 scoop of Anea Vanilla Protein Powder
  • 4 eggs, room temperature
  • ½ cup lemon juice
  • Coconut whipped cream, for serving

Directions

  1. Preheat oven to 325°F and line an 8x8 baking dish with parchment.
  2. Add oats to a food processor and process until they become a fine flour. Add Anea Vanilla Protein Powder, salt, and baking powder. Pulse a few times to incorporate, then add almond extract, avocado oil, and honey. Pulse until the mixture forms a crumbly dough.
  3. Press the dough into the baking dish using a measuring cup to help form it into an even layer. Bake for 10 minutes.
  4. Meanwhile, add sugar or honey, lemon zest, Anea Vanilla Protein Powder, and eggs to a mixing bowl. Whisk until the protein powder is fully incorporated, then whisk in the lemon juice.
  5. Pour the lemon mixture on top of the oat shortbread.
  6. Bake for 15 minutes. It will be set with a slight jiggle when done.
  7. Allow the lemon bars to cool completely, then cover and place in the fridge for a few hours before cutting into squares. Garnish with a dollop of coconut whipped cream when ready to serve!
