Protein Peanut Butter Cups

Ingredients

  • ¾ cup natural creamy peanut butter 
  • 1 scoop Anea Vanilla Protein Powder 
  • ¼ cup maple syrup 
  • ½ teaspoon kosher salt 
  • 1 (10 oz) bag of dark or semi-sweet chocolate chips 
  • 1 tablespoon coconut oil 
  • Flaky sea salt, for serving

Directions

  1. Add natural creamy peanut butter, Anea Vanilla Protein Powder, maple syrup, and kosher salt to a small mixing bowl. Stir until smooth. Use a tablespoon to divide the mixture into 12 pieces. Roll into balls, then flatten each ball into a round disc. 
  2. Add chocolate chips to a microwave-safe bowl with coconut oil. Heat in 30-second increments until melted, stirring after each interval. 
  3. Line a muffin tin with liners. Fill each cup with about half a tablespoon of melted chocolate. Use the back of a spoon to gently push the chocolate about halfway up the walls of the liners. 
  4. Place a peanut butter disc in the center of each cup, then top it with the remaining melted chocolate, about another half tablespoon. 
  5. Transfer to the refrigerator to set for about 20 minutes. When ready to serve, top each peanut butter cup with a sprinkle of flaky sea salt.
